Let’s say you and a friend are discussing some recent event. Your friend comes up with a conclusion as to what has happened and you think his conclusion is complete nonsense. In English one way of expressing this is to say: «How do you figure?» (That is, «How did/do you come to/arrive at that conclusion?»)
How could you express this in Spanish, please?

or
¿Cómo se te ocurre eso?
Or is there another (more colloquial) way?

I’d translate it as your second option: «¿cómo se te ocurre eso?». The first one is too formal. There are other ways of saying this (more colloquial), but I think they’re too colloquial. For example:
— ¡Anda ya!
— ¡Venga ya, cómo se te ocurre eso!
— ¡Venga hombre, eso no puede ser!
— Etc.
Wait for more suggestions anyway.

There are a lot of expressions that can be used in this context. Rubn’s «eso no puede ser», etc. Some more suggestions (keeping in mind the original in English): ¿Cómo (es que) te ha dado por pensar eso? ¿Cómo (es que) has llegado a eso? ¿Por qué lo crees así? ¿Por qué crees que es eso lo que ha pasado?
¿Cómo se te ha ocurrido/se te ocurre eso? and ¿Cómo has llegado a esta/esa conclusión? are good to me.

Creo que seria mejor: ¿Cómo llegaste a eso? o ¿cómo se te ocurrió eso?

It is an AE expression, not so common in British English.
In Spain, we say;
— ¿Tú crees.
— ¿Quién de lo dijo.
— ¿Cómo lo sabes / te enteraste?
— ¿De dónde te sacas eso? (sarcastic)
I think most of the Spanish versions here are more emphatic than the English one. ‘How do you figure?’ is rather ironic, not so direct as many of the Spanish ones.
