It’s important to understand the difference between noncount and count nouns when using many and much. Noncount nouns are often used to describe large categories while count nouns are usually more specific.

Noncount nouns always use a singular verb. Count nouns are singular or plural.

Much and Many are usually used with the negative:

I am not sure if I should use ‘much’, not ‘many’ in the following case:

A. Have we got any apples?
B. I’m afraid, not. You should buy some.
A. How much apples should I buy?
B. Two kilograms.

So is it right to use ‘much’ in this case?

I agree with Alisterio.

Regardless the kind of measure you’re using in the conversation. apples are countable nouns, thus much is to be used.

There are two theoretical possibilities:
How many apples (countable) should I buy?
How much apple (uncountable) should I buy?

The second sentence seems unusual to me, though it may be natural for those who buy processed apple in bulk.

But if you are asking How many apples should I buy?, the answer, to match the question, should specify the number of apples, not the number of the units of weight. So it seems we should ask How many pounds of apples should I buy?, but I just can’t see people doing that.

Or, let’s say, I want to know the quantity of apples that somebody bought, I can imagine saying How many apples have you bought?, but let’s change the object for a while, can you really imagine saying How many raspberries have you bought? How many redcurrants.

But how much redcurrants? sounds wrong too.

In a perfect (grammatically correct) world, people would probably ask each other «How many kilos of apples should I buy?» if they were expecting to receive the answer «You should buy 2 kilos.»

However, in a real-life setting, I don’t think there would be any danger of a misunderstanding if you asked «How many apples should I buy?» and were told «2 kilos.»

I guess, we can just use such nouns in singular as uncountable with ‘much’:

That’s exactly what I was just imagining.

I am shopping.

I respond «How many?»

And here is another quote where a countable noun is used before ‘much’:
Discussion on Carrots: how much is too much?

And the answer is given also with a countable noun:
I have read in earlier postings that 1 carrot 4x/day is a good rule for carrots.

So, indeed it seems that in real life people can easily switch from the uncountable meaning of the noun to the countable and vice versa, as Alisterio mentioned.
The only unacceptable variant would be to use countable nouns immediately after ‘much’, as in ‘how much apples’
